Fox 4 People
- 400 grams of durum wheat;
- 80 grams of mozzarella;
- 9 eggs;
- Frying oil (preferably extra virgin olive oil)
- Salt and pepper q.s.
Place the flour on a pastry in the fountain, then pour in the middle a little salt and 4 eggs. Whisk until mixture is smooth. Let the dough rest for 30 minutes in a cool place.
Meanwhile cut the mozzarella into cubes and mix it with four beaten eggs earlier. Season with salt and pepper.
Roll out the dough into a thin sheet and cut many records of about 8 mm in diameter. At this point the brush discs of dough with the remaining egg (beaten previously). Put in the center of each disk a little filling and fold it in half, so as to obtain taqle a half moon. Press firmly on the edges to seal the panzerotto obtained.
Fry in deep fat and serve hot.
